- #22 [letsrock], 11-07-11 22:27they do... if you touch the edges wright after you have opened it, you will see they contract. But this only last for about 10 mins.
I have ordered from oriole a few times, total about 100 pcs, only 1 was spoiled. You need to flush them thoroughly first, and also scrub it to get rid of the dirt and worms.
Oyster opening is not that difficult, just need some practice. then you rinse the meat with drinking water to flush out the chips from the shell during opening.
Squeeze a lemon over it and a dash of tabassco is the perfect way to get it ready for oyster sucking. - #23 [letsrock], 11-07-11 22:29BTW, oyster worms are NOT parasites, they just live on the cracks or layers of the oyster shells. It has nothing to do with the health or condition of the oyster.
Follow the R rule for french, and do the reverse for australian. -
- #24 [dr_cychu], 11-07-11 22:51Thanks letsrock for expert advice!!!
For ordering oyster from the web, like other products, there is no way to know the actual size, weight, consistency of the oysters etc., is it the reason for cheaper price? Anyway, I have no experience in ordering food from oriole. - #25 [letsrock], 11-07-12 06:32When the oysters are ready to harvest, they need to get to a certain size first. But then, different breeds have different sizes.
all australians and Irish are fairly consistent, while for french, the only type that has "size" category is belon (from 0-000000). Most of what we can get in hong Kong is 0000. There is the US Jumbo, which is too big for oyster sucking I find.
In general, size doesn't really matter, except for belon.
What kind of flavor do you like? more sea water, with metal or creamy?
最後修改時間: 2011-07-12 06:34:27 - #26 [dr_cychu], 11-07-16 11:02Thanks!
I like more sea water and less creamy. Fine de claire is my favourite. Namibian is also good for me. I found Belon is too metallic and it is not my cup of tea.
I usually buy oyster from supermarket and never tried web ordering before.
Anyway, is it a must to use oyster knife to open? Any tricks? I really wish to witness "live" oysters
最後修改時間: 2011-07-16 11:05:31 - #27 [letsrock], 11-07-17 10:47Oyster knife is a MUST.
The trick..........after you have opened around 6, you will start to get a hang of it.
Search "opening oysters" at youtube and you will find tones of videos. - #28 [dr_cychu], 11-08-01 10:57Oyster shucking is not easy to me.
For larger osyter like Totton bay & Gillardeu, I found it very difficult to open. I have only one oyster knife, short one. Very tired afer opening more than one dozen of oyster. - #29 [papamouse], 11-08-02 10:05a screw driver is more helpful rather than oyster knife
