唔好意思唔係想柴台,朋友麵包痴剛剛打比我,我就問佢有冇係屋企自已整佢話停左因為食麵包太多(每日食兩個都係自已整比家人食, 5個人之中4個膽固醇超哂標係老媽子因為有食開藥所以仲係係醫生控制水平之內)醫生叫佢停或盡量小食,利申:我自已好小食麵包(1個月最多兩片多士之類)所以唔知呢樣野會唔會係幫兇

問題係麵粉,一般麵粉嘅升糖指數太高,...
我老闆係用一份麵粉加一份全麥麵粉,酵母未減過份量,怕升唔起...試過把全麥麵粉份量加多尐,就升唔起喇,死死實實咁! - #63 [chloebb], 15-07-20 14:33#62 只是相對而言。比起其他包,法包無糖無油無奶.

有時間心機真好 - #53 [chloebb], 15-07-20 12:55I have the panasonic, but the loaves became boring so now I only use it to knead the dough, which is still a good use of it.
For the health conscious, I highly recommend the baguette recipe which is just flour, water, a little salt and half the amount of yeast you normally use. It is actually one of the panasonic standard recipes, the French bread one, but you can make smaller rolls instead of one big loaf.
And I highly recommend using the autolyse method- 水合法, which basically means you mix only the flour and water first, whatever recipe you use. The initial mixing of flour and water gives you much better texture.
